Description: elegantly simple, delicious way to appreciate the bounty that exists even in winter ...change the vegetables, herbs, spices, and oils to suit your individual preferences, complement other menus items, or just change things up ... meat free, gluten free, soy free, dairy free, nut free but packed with wholesome goodness!
Ingredients:

turnips, parsnips, rutabaga, carrots...
1
potatoes, beets, celery root, kohlrabi, onions... trimmed and cut into hearty bite-sized pieces
2-3
sprigs fresh herbs (rosemary, thyme, etc.)
1
head garlic, separated into cloves
1
salt
1
pepper, freshly ground
1
spices of your choosing
1
olive oil for drizzling
Instructions:
Preheat oven to 400 degrees F.
Place vegetables and herbs in a large baking dish -- best if they fit in a single layer. Season with salt, pepper, and any other spices you like. Drizzle generously with oil. Toss to coat the pieces evenly. Put in oven until tender and golden, stirring occasionally -- about 45 minutes.
