Makes: 4 servings
Description: Cuban beef and rice with a sweet, savory taste. Can make for about $7 to feed a family of four!
Ingredients:
1 box
GOYA Amarillo Rice
1 lb
ground beef
1
small yellow onion
1
can of pasta sauce
2-3
cloves of garlic
1 tsp
cinnamon
1 tsp
nutmeg
Instructions: Over medium heat, heat olive oil and saute minced garlic cloves and onions in a frying pan. When the onions are clear, add ground beef. Cook until browned, then add about 1/2-3/4 the jar of pasta sauce, cinnamon and nutmeg. Turn stove down to low and let simmer for about half an hour, stirring occasionally. Cook rice separately according to package directions. The meat and sauce should be really thick and dark in color. Add more cinnamon and nutmeg to taste, along with salt and pepper. For fancy presentation, serve beef over rice with side salad and a crusty bread. If you don't care about all that, mix in rice when done cooking into frying pan and serve in bowls to eat while watching a movie.
My son wouldn't eat big fried onion chunks on top so I omitted that from his bowl, but he loved the dish and asked for seconds.
