Makes: 12 servings
Description: Yummy breakfast brunch peachy coffee cake best served warm
Ingredients:
2 1/3 cups
all-purpose flour
1 1/3 cups
granulated sugar
3/4 tsp
salt
3/4 cup
Crisco shortening
2 tsp
baking powder
3/4 cup
milk
2
eggs
1 tsp
vanilla
(1) 3 oz pkg
cream cheese, softened
(1) 14oz can
sweetened condensed milk
1/3 cup
lemon juice
2 tsp
ground cinnamon, divided
(1) 29 oz can
sliced peaches, well drained and chopped
1 cup
chopped nuts
1/3 cup
firmely packed brown sugar
Instructions:
Preheat oven to 350 degrees. In a large bowl, combine flour, sugar and salt. Cut in shortening until crumbly, Reserve 1 cup of crumb mixture. To remaining crumb mixture, add baking powder then milk, eggs, and vanilla. Beat on medium speed for 2 minutes. Spread into greased 9x13 baking pan. Bake 25 minutes or until set.
Meanwhile in a small bowl, beat cheese until fluffy. Gradually beat in sweetened condensed milk; stir in lemon juice and then peaches, 1/2 cup nuts and 1 tsp cinnamon. In medium bowl, combine reserved crumb mixture, remaining 1/2 cup nuts, 1 tsp cinnamon and brown sugar. Spoon peach mixture evenly on top of cake. Sprinkle with crumb mixture. Bake 35 minutes longer or until set.
**(1) 21 oz can of Apple Pie Filling can be substituted for peaches
