Description: This is amazingly DELICIOUS. And, it's a healthy breakfast to get your protein and fiber in at the start of the day! You might even want to eat it...well, for every meal of the day!
Ingredients:
1/2 c
egg whites
1 cup
fresh or frozen mixed berries (blueberries, raspberries, blackberries, & strawberries)
1 spray
PAM
1/8 c
Sugar Free Syrup (optional)
1/2 tsp
Parsley
Instructions: Spray a medium sized pan with PAM. Put on Medium-high heat. Add the berries to the pan and cook for 3 minutes. Move berries to one side of pan. Add the measured egg whites on the other side of the pan and let them cook. They will cook quickly. Move the pan around so all of the egg whites are cooked. Mix everything together and cook until berries are warm, about 5 min (might need to turn heat down). Add the parsley. Feel free to add the syrup to your special breakfast treat!
