Simple Tiramisu

Makes: 12 Servings

Description: This is a simple, no bake tiramisu recipe. Tiramisu is my oldest daughter's favorite. My youngest daughter and I worked out this quick and easy, no bake version to make during the summer when it's a chore to turn on the oven. Let me know if you make it and what you think. I've never measured the serving size. It makes a cake. Twelve generous servings is a guess on my part.

Ingredients:
12 oz package  Margherite cookies
8 oz  heavy whipping cream
8 oz  mascarpone
1/3 cup  sugar
2 TSP  vanilla extract
8-12 oz  cup of strong coffee
Enough to dust  unsweetened fine ground cocoa
8 oz  rum (optional)

Instructions: Ingredients

12 oz package of Margherite cookies (alternatively you can use lady fingers or long Filipino Butter Cookies)
8 oz heavy whipping cream (or 12 oz tub of unsweetened whip cream, note: if you use sweetened whip cream, cut the sugar or it'll be very sweet)
8 oz mascarpone (or mascarpone substitute: see below)
1/3 cup sugar
2 TSP vanilla extract
8-12 oz cup of strong coffee (any kind, any flavor)
8 oz rum (optional)
unsweetened fine ground cocoa, dark or semi sweet cocoa powder, or chocolate shavings (garnish)

Instructions

Whip together: cream, sugar, vanilla, mascarpone
Note: we used a bullet to expedite the process
If you're using unsweetened whip cream: thoroughly combine sugar, vanilla, and mascarpone then fold the resulting mixture into the whipped cream
Dip each cookie into coffee
Dip each cookie into rum (optional)
Do not soak
Place cookies one at a time after dipping on the bottom of the container you're using to make the first layer
Spread half the whipped cream mixture on top
Dust with cocoa powder or sprinkle with chocolate shavings
Dip each cookie into coffee
Dip each cookie into rum (optional)
Do not soak
Place cookies one at a time after dipping on top of the whipped cream to make the second layer
Spread the remaining whipped cream mixture on top of the second layer of cookies
Dust the top with cocoa or garnish with chocolate shavings
Refrigerate for at least an hour (ideally overnight)
The cookies soften into a cake-like substance by absorbing the moisture from the whipped cream mixture

Mascarpone substitutes (if you can't find mascarpone):

Cream together:
6 oz cream cheese
2 TBSP sour cream or 2 TBSP yogurt
3 TBSP Goat Cheese or 3 TBSP heavy whipping cream
Or
6 oz cream cheese
2 TBSP sour cream or 2 TBSP yogurt
2 TBSP butter
Or
Drain 2 TBSP cottage cheese and press then whip with 1 TBSP Yogurt
Cream cottage cheese/yogurt mixture with:
6 oz cream cheese
2 TBSP sour cream or 2 TBSP yogurt
