Grilled Breaded Potatoes

Makes: 4 servings

Description: September is known as National Potato Month so here is a new way to prepare potatoes. I created this recipe one very hot day (of which we had so many of this summer!) when I didn't want to use my oven. Everyone liked them so I'll definitely be making them again.

Ingredients:
4  potatoes, peeled
1 Tablespoon  olive oil
1/4 cup  Parmesan cheese
1/4 cup  bread crumbs
1 teaspoon  parsley
1 teaspoon  oregano
1/8 teaspoon  pepper
1/2 teaspoon  salt

Instructions: Cut potatoes into chunks. Mix with oil. In a separate bowl, mix the rest of the ingredients. With a few potato chunks at a time, toss with cheese mixture. Put in a sprayed (or greased) grill basket and grill for about 25 minutes or until potatoes are tender. Check every now and then. You may need to stir them once in a while so they don't burn.

I enjoy preparing these and also sweet potato fries with paprika, chili powder a little sea salt and olive oil.
