Easy Bacon Onion Quiche

Makes: 6 Slices

Description: Warm, creamy bacon onion egg filling in a flaky pastry crust. Ready in 30 minutes!

Ingredients:
5 slices  bacon
4 large  eggs
1 cup  heavy cream
1 large  onion, diced
8 ounces  shredded Monterey jack cheese
1 stick  salted butter, softened
4 ounces  cream cheese, softened
1 pinch  nutmeg
1 pinch  cayenne pepper
2 cups  all-purpose flour

Instructions: Prepare bacon until crispy. Reserve bacon drippings in skillet. Saute onion until tender. In mixing bowl, combine flour, butter, and cream cheese with a fork until mixture forms soft dough. Add more flour if necessary. Press dough into 10 inch pie pan, working up the sides. In mixing bowl, whisk together eggs, cheese, cream, spices, and onion. Pour into prepared crust. Bake at 350 for 20 to 25 minutes. Allow to cool for 5 minutes before serving.

I LOVE this recipe! It came out really well. I made a 2nd pie with the same recipe and added brocolli as well. It worked!
