Cheesecake Sopapillas

Makes: 36 pieces

Description: A delicious, indulgent, cream cheese filled, cinnamon topped bite sized treat that is sure to make anyone smile and ask for more.

Ingredients:
2  8 oz. squares of cream cheese, softened
2  8 oz. packages of cresent rolls
1 teaspoon  vanilla
1 cup  granulated sugar
1 tablespoon  cinnamon
1/2 cup  granulated sugar
1/2 stick  butter (melted)

Instructions: Preheat oven to 375 degrees. Spray non-stick cooking spray onto 9x13 cookie sheet. Open one package of cresent rolls and roll out flat onto cookie sheet, pinching all seems together to make one large sheet. In a large mixing bowl, beat together both 8 oz. squares of cream cheese, vanilla and one cup of sugar until throughly mixed. Spread cream cheese mixture onto cresent dough leaving about 1/4 inch to 1/2 inch of dough uncovered. Open second package of cresent rolls and gently unroll and place on top of the cream cheese mixture, again pinching all seams together and pinching the edges together so that all the cream cheese mixtured is enveloped by the dough. Melt the half stick of butter and drizzle all over the top layer of cresent dough. In a small bowl, combine 1/2 cup of sugar and cinnamon. Sprinkle mixture over butter completely covering top layer of cresent dough. Bake at 350 degrees for 25-30 minutes. The edges will be golden brown. Cool completely and then cut into bite sized pieces using a pizza cutter. Enjoy!
