Makes: 4 servings
Description: Chicken Marsala, cooked with Marsala wine and cooking sherry. It's delicious!!
Ingredients:
1/4 C
flour
1/2 t
salt
1/4 t
pepper
1/2 t
oregano (dried)
4
skinless, boneless chicken breasts
3 T
butter
4 T
olive oil
1 C
mushrooms, sliced
1/2 C
Marsala wine
1/4 C
Sherry (cooking)
1/2 t
parsley (dried)
Instructions:
Wash chicken. Mix flour, salt, pepper, and oregano. Toss chicken pieces with flour mixture.
In a large skillet, melt butter into oil over medium heat. As soon as butter is melted, put breaded chicken in the pan, and lightly brown. Turn over chicken pieces, then add mushrooms and parsley. Add wine and sherry. Cover skillet; simmer chicken on low for 10 - 15 minutes, turning once. Chicken should be tender, white with clear juices.
Very easy to make and was delicious. I left out the mushrooms. Took less than 30 minutes to whip this dinner up. Added roasted green beans...Viola!
This recipe sounds a lot more difficult than it actually is. You could cut down on the cooking time by using jar roasted peppers from the grocery store, …

This recipe has alcohol in the marinade. Beer and worcestershire sauce with seansonings. I let mine marinade for at least 2hrs. Longer is always better.
