My peppermint bark rice crispy treat recipe is perfect for the holiday season. The best part is that it doesn't take much time to prepare. This yummy recipe is a new spin on traditional crispy treats. They are drizzled with chocolate, white chocolate and covered in crushed peppermint candies for a delightful minty flavor. As a busy mom of three boys, I don't always have time to make a fancy Christmas treat. Preparing these treats gets me out of the kitchen and back to the holiday fun.
Stick of Salted Butter
10-oz Bag of Regular Marshmallows
Peppermint DoTerra Oil (or 1/2 tsp mint extract)
Rice Crispy Cereal
Unwrapped Peppermint Candy (crush in a blender)
Melt the butter in a large non-stick pan. Once the butter is melted, add the bag of marshmallows. Stir continually until the butter and marshmallows are completely melted and well combined. Add the peppermint oil to the melted marshmallow mix. Remove the pan from the heat and stir in the rice crispy cereal. Stir well until all of the cereal is well coated with the peppermint marshmallow mixture. Press the treats into a 9x9 greased pan and allow them to completely cool. Once the treats have cooled, melt the dark chocolate and drizzle it over the treats. Repeat this step for the white chocolate. Crush the mints in a blender and gently press the pieces into the treats. Cut and serve with love!
